Homemade soups are superb value in so many ways, They are easy to make, they are cheap to make, they are full of nutritious goodness and you can vary them every time you make them.  This one for Butternut Squash is one of my favourites.  It cost me only £1.59 for a full pot to serve 4 people. At only 136 calories per portion this is another recipe ideal for your fasting days on the 5:2 diet. 

How to Make a Tasty Squash Soup

I'm a lazy sort of cook so I try to keep things simple: This makes a beautifully smooth and tasty soup. The hardest part is cutting up the butternut squash but I've found if I cut it into rings first then peel it, it is much easier. 

Approximate Preparation and Cooking Time

Prep time: 15 min
Cook time: 40 min
Ready in: 55 min
Yields: serves 4

Ingredients for Homemade Butternut Squash Soup

1 tablespoon olive oil
1 medium onion - diced
Butternut squash - diced
2 potato - diced
2 cloves garlic
2 vegetable stock cubes and 1 & half pint water
or 1 & half pint vegetable stock/ broth
black pepper

Method: 

In a large pan, heat the olive oil
Cook diced onion until transparent
Add crushed garlic, diced squash and potato
Cook for one minute
Add stock and seasoning
Bring to the boil
Simmer for 30-40 minutes until vegetables are soft
Remove from heat,
Blend using hand-blender to a smooth consistency
If you like to make your soup creamy, add quarter pint of milk and heat gently
Serve and enjoy
